Dinner

I had pancakes for dinner. This isn't revolutionary; breakfast for dinner is one of the great joys of life. And pancakes are amazing. Over the summer, I found a great recipe for pancakes for one. Since it's just me, this recipe has changed my pancake game. I'll share the recipe at the end of this post. 

Today isn't about pancakes, but about dinner. If I had to summarize what adulthood is in one statement it would be this: Being an adult is having to decide what to have for dinner for the rest of your life. I don't know about you, but deciding what to have for dinner is the worst. I make the same five things, and I don't want to eat any of them anymore. I'm trying a new meal kit service starting next week; I'm hoping it'll get me back to enjoying planning dinner again. 

Today's piece is an homage to my recipe box. I've been meaning to paint it, so today is meant to inspire me to get my act together and paint it.

BONUS - Pancakes for One
1 cup flour
1 tsp baking powder
1/2 tbsp sugar
1/2 tsp salt
1 egg
3/4 cup milk
1/4 tsp vanilla
1 tbsp butter, melted
1 tsp butter for the pan (or use cooking spray)

Whisk flour, baking powder, sugar, and salt in a bowl. Beat egg, then whisk in milk, vanilla, and butter. Pour wet ingredients into the dry ingredients until just incorporated. 

Heat griddle and melt butter. Ladle 3/4 cup of batter to make each pancake. Cook for 3 minutes on one side. Flip and cook for an additional minute. 

This recipe makes 3 large-ish pancakes (think diner style serving).
